Undertone is the colour under your skin’s surface. It doesn’t change with a tan. Three quick checks in daylight:

If gold jewellery flatters you more, you are probably warm. If silver does, cool. If both look fine, neutral.
Skin that tans easily and goes golden is often warm. Skin that burns and goes pink is often cool.

Changes within about two levels of your natural colour look the most natural and grow out softly. Bigger jumps work too, but take more upkeep, and going much lighter needs lightening.
It helps. Copper and warm browns make green and hazel eyes glow; cool browns, ash and pearl make blue and grey eyes look brighter.
